1 cup Blue Ribbon® White Rice
1 1/2 cups vegetable broth
1/2 cup vegetable juice
1 tsp fresh basil leaves
1 tsp fresh oregano leaves
1/2 tsp salt, optional
1 can (14 oz.) artichoke hearts, drained and quartered
1 can (2.25 oz.) sliced ripe olives
1 jar (7 oz.) roasted red peppers, drained and chopped
2 Tbsps fresh parsley, snipped
1/2 tsp ground black pepper
1/4 cup shaved Parmesan cheese

Cooking Directions

In a large skillet, over medium heat, combine all ingredients, except Parmesan cheese. Bring to a boil. Reduce heat to simmer; simmer 20 minutes. Remove from heat. Fold in Parmesan cheese.

Recipe Tip:  Do you have a rice cooker?  To prepare this dish ... Add all ingredients except parmesan cheese. Stir well to mix ingredients. Cover and cook until rice cooker shuts off. Carefully remove cover. Fold in parmesan cheese.
