Cooking Directions
In a large saucepan, sauté onion in hot oil until tender. Add uncooked rice, cook and stir for 1 minute. Add chicken broth. Bring to boil. Cover and simmer for 35 minutes or until all liquid is absorbed. Stir in Feta cheese, mint and pepper. Serve warm. Garnish with fresh mint, if desired.
