Feta Mint Brown Rice

Serves 6
An easy side-dish ... sauté onion, add whole-grain brown rice, low-sodium chicken broth and simmer for about 35 minutes:  add feta cheese and fresh mint.

1/4 cup onion, chopped
1 Tbsp olive oil
1 cup Blue Ribbon® Whole Grain Brown Rice
2 cans (10 1/2 oz.) low sodium chicken broth
1/2 cup crumbled feta cheese
3 Tbsps fresh mint leaves, snipped
1/2 tsp pepper

Cooking Directions

In a large saucepan, sauté onion in hot oil until tender. Add uncooked rice, cook and stir for 1 minute. Add chicken broth. Bring to boil. Cover and simmer for 35 minutes or until all liquid is absorbed. Stir in Feta cheese, mint and pepper. Serve warm. Garnish with fresh mint, if desired.
