Baked Brown Rice Custard

This recipe appeared on Carolina® and River® Rice packages from late 1960's. This recipe can be enjoyed using regular white rice or for a nutty-flavor try preparing using brown rice.

Ingredients

1/2 cup Blue Ribbon® Whole Grain Brown Rice
2 1/2 cups milk
non-stick cooking spray
3 eggs, lightly beaten
3/4 cup sugar
1/4 cup raisins
1/4 tsp salt
2 tsps vanilla extract
1/4 tsp ground nutmeg
fresh fruit (optional)

Cooking Directions

Prepare rice according to package directions.  Preheat oven 325°F. Spray 2-quart square baking dish with non-stick cooking spray. Combine all ingredients and pour into prepared baking dish. Place baking dish in a larger baking dish in the oven. Pour VERY HOT water in the larger dish so that the water comes halfway up the sides of the smaller dish. Bake 40 to 45 minutes, or until set.  Cool completely before serving.  Garnish with fruit, if desired.
