1 cup Blue Ribbon® White Rice
3 cups cooked turkey, coarsely chopped
1 can (8 oz.) pineapple chunks in juice, drained, juice reserved
1 can (8 oz.) sliced water chestnuts, drained
1 apple, cored and chopped
1/3 cup macadamia nuts, chopped, optional
1 cup vanilla yogurt
lettuce leaves
1/4 cup shredded coconut, toasted**

Cooking Directions

Prepare rice according to package directions. Combine rice, turkey, pineapple, water chestnuts, apple and nuts. Combine yogurt and pineapple juice.  Toss with rice mixture. Serve on lettuce leaves and garnish with toasted coconut.

** To toast coconut, spread in a thin layer in a shallow pan. Bake at 350°F for 7-12 minutes or until lightly browned. Watch very closely to avoid burning.
