Feta Mint Rice

1/4 cup onion, chopped
1 Tbsp olive oil
1 cup Blue Ribbon® White Rice
2 1/2 cups vegetable broth
2 oz crumbled feta cheese
3 Tbsps fresh mint leaves, snipped
1/2 tsp pepper
fresh mint leaves (optional)

Cooking Directions

In a large sauce pan, sauté onion in hot oil until tender. Add uncooked rice, cook and stir for 1 minute. Add chicken broth. Bring to a boil. Cover and simmer for 20 minutes or until all liquid is absorbed. Stir in feta cheese, mint and pepper. Serve warm, garnished with fresh mint if desired. Serves 6
