Ingredients

2 cups cooked Blue Ribbon® White Rice
2 cups (8 oz.) Monterey Jack cheese, shredded
1 1/2 cups chicken breast, cooked and chopped
1 can (12 oz.) evaporated milk
1/2 cup red onion, finely chopped
2 eggs, lightly beaten
1/4 cup chopped fresh cilantro leaves
2 Tbsps butter, melted
1 Tbsp jalapeño pepper, diced (optional)

Cooking Directions

PREHEAT oven to 350 degrees. Grease a 2-quart casserole dish. COMBINE ingredients well in dish. BAKE 45 to 50 minutes or until knife inserted in center comes out clean.
