Cashew Chicken Rice Toss

1 cup Blue Ribbon® Whole Grain Brown Rice
2 cups chicken breast, cooked and cubed (about 3 pieces)
1/2 cup celery, finely sliced
1/4 cup green salad olives, sliced
1/4 cup green onion, chopped
1/2 cup mayonnaise
1/4 tsp ground black pepper
1/4 cup Italian salad dressing
1/2 cup cashews, coarsely chopped
lettuce leaves (optional)

Cooking Directions

Prepare rice according to package directions.  In a mixing bowl, combine cooked rice, chicken, celery, olives, and green onions. In a small bowl, stir together mayonnaise, pepper, and Italian dressing; and add to chicken mixture. Toss gently. Cover and chill.

Just before serving, add cashews. If desired, place salad into lettuce lined salad bowl or plates.
