Brown Rice with Walnuts and Asparagus

1 cup Blue Ribbon® Whole Grain Brown Rice or Blue Ribbon® White Rice
1/2 cup walnuts, chopped and toasted
1 lb asparagus, trimmed, diagonally cut and blanched
1/2 cup red onion, diced
6 oz ham, cut in strips
1 shredded red cabbage
2 Tbsps fresh basil leaves, chopped
2 Tbsps sherry vinegar
3/4 tsp salt
1/2 tsp pepper
2 Tbsps walnut oil
lemon wedge

Cooking Directions

Prepare rice according to package directions; set aside to cool. In a large bowl, combine first 7 ingredients. Toss to combine. In a smaller bowl, combine remaining ingredients. Pour over rice/vegetable mixture. Refrigerate. Serve with fresh lemon wedge.

Make it vegetarian ... do not include the ham strips, prepare as directed above.
